Lucky me, I was at the right place at the right time a few weeks ago when the man of the house where I was visiting returned home with his deer kill. He gave me a big chunk of the meat. His wife explained how to tenderize it by soaking in vinegar. Next day after the process I seasoned and put it to cooking in the crock pot for about six hours till it was tender. Lastly I chopped it up in the food chopper. Then smothered it dan la graisse de cochon with a couple of chopped up onions and diced potatoes and cooked it together using the same seasoned juice from the crock pot to keep it moist. Mais c’est tes bon mais cher.
Making a roux with hog lard is as much a part of our Cajun culture as gumbo, boudin and crawfish etouffee. What do you think? I remember when I was little Papa had a big crock jar on the side of the gas stove for his hog lard and right next to it was a five gallon tin can for the flour. He’d pull a wooden chair up to the stove and put his right foot on that bottom bar out of habit. Saying that was to balance his back.
Every thing he ever cooked was in those iron pots. He’d reach down in that jar and come up with a heaping cooking spoon of lard. He’d hit it on the side of that pot, and then he’d reach down for two equally big spoons of flour for his roux. He started it cooking cold. Best Sunday fricassee we ever ate.
Continued from last week: I told the service manager I’d called my daughter to come for me as time was running late I was not sure how much longer my van would be in his shop. (And to say this to her and me – my family does want to know all that happens to me.) He explained this to us: They found the flange that held the shift cable to the transmission was missing its bolts. So we questioned him if these bolts were not removed directly from under the hood, how else could anyone have been able to remove them? He answered it could be reached from underneath the van where the transmission is located in front of the driver. And he said it was done by someone who knew what they were doing.
And he also said this was not done to my van to bring me harm per se. It was done as a nuisance to aggravate me.
It worked. Van froze where I parked at home. This was a very costly joke on me. It would have caused me harm if this steering column would have broken on the road while I was driving. And had this break down not happened in my yard I might have been stranded somewhere on the road. How many miles had I driven before this gave out? Is this a new fad?
My van is only parked at home with me. When and where? Was I sleeping? Another neighbor could have been the target. No one is safe. I reported this to the sheriff. So now we’ll wonder who will be next. I’m not asking God to punish – just to put it back on the malfector twicefold.
To cleanse my body’s greed for sugar, I sacrificed candy and cookies for Lent. Amètie,
